Strawberry Ice Cream Pie
|Sugar free strawberry gelatin||4 Ounce|
|Boiling water||2⁄3 Cup (10.67 tbs)|
|Sugar free low fat strawberry ice cream||2 Cup (32 tbs), softened|
|Frozen low fat nondairy whipped topping||1 Cup (16 tbs), thawed|
|Frozen pie crust||1 , baked|
Put the gelatin powder into a large mixing bowl.
Add the boiling water.
Stir until gelatin is dissolved.
Add the ice cream slowly.
Stir until the mixture is smooth (except for the strawberry pieces, of course).
Stir in the whipped topping by spoonfuls.
Beat after each addition.
A whisk works well.
Spoon the mixture into the prepared pie crust.
Freeze a few hours until firm.
For easiest cutting, run a sharp knife under hot running water between each cut.
Garnish with strawberries and whipped topping, if desired.
