Frozen Lemon Or Lime Pie
|Lemon juice/Lime juice||180 Milliliter (3/4 Cup)|
|Pectin powder||1 1⁄2 Teaspoon (Universal)|
|Honey||180 Milliliter (3/4 Cup)|
|Plain nonfat yogurt||355 Milliliter, warmed (1 1/2 Cups)|
|Whipping cream||240 Milliliter (1 Cup)|
|Vanilla extract||3⁄4 Teaspoon|
|Graham cracker crumb crust/Prebaked dough crust||1|
Bring juice to boil in saucepan.
Add pectin along with 2 tbs honey.
Boil 1 minute, stirring vigorously.
Stir in remaining honey and remove from heat.
Combine with warmed yogurt (90-100°F [38°C]).
Chill in shallow pan until semifirm, 1/2 hour.
Whip cream and vanilla and fold into chilled yogurt mixture.
Pour into crust; freeze until firm or frozen.
