Famous Lemon Pie
|Granulated sugar||1 Cup (16 tbs)|
|Eggs||3 , separated|
Beat egg yolks and add juice and rind of lemon, water and 1/2 cup sugar.
Cook until thick, stirring constantly.
Beat egg whites very stiff and gradually add other 1/2 cup sugar.
Fold whites slowly into hot lemon mixture.
Pour into cooked pie shell and brown quickly in hot oven, low oven will cause this to become flat.
