Rice Topped Shepherd s Pie
|Vegetable oil||2 Teaspoon|
|Salt and pepper||1|
|Carrots||2 , diced|
|Onion||1 , chopped|
|Ground beef||1 Pound|
|Beef broth||2⁄3 Cup (10.67 tbs)|
|Tomato paste||1 Tablespoon|
|Worcestershire sauce||1 Tablespoon|
|Frozen green peas||3⁄4 Cup (12 tbs)|
|Cooked rice||3 Cup (48 tbs)|
|Egg||1 , beaten|
|Cheddar cheese||1 Cup (16 tbs), grated|
|Sour cream||1⁄2 Cup (8 tbs)|
Preheat oven to BROIL.
In an ovenproof 10 inch (25 cm) skillet, heat oil.
Cook carrots and onion 3 minutes.
Add ground beef.
Fold in broth, tomato paste and Worcestershire sauce.
Season to taste with salt and pepper.
Cook 5 minutes.
Add green peas.
Cook 1 minute.
Meanwhile, in a bowl, combine rice, egg, grated cheese and sour cream.
Spread over beef mixture.
Broil in oven 7 minutes or until rice topping is quite hot.
