Apricot Cheese Pie
|Dried apricots||1 Cup (16 tbs)|
|Unbaked 9 inch pie shell||1|
|Grated lemon peel||1⁄2 Teaspoon|
|Lemon juice||1 Teaspoon|
|Sugar||3⁄4 Cup (12 tbs)|
|Creamed cottage cheese||1 1⁄2 Cup (24 tbs), sieved|
1. Rinse and drain apricots; cut into small pieces and distribute over bottom of pie shell.
2. Combine eggs and lemon peel and juice; beat slightly. Gradually add a mixture of sugar, flour, and salt, beating constantly. Add the cottage cheese and mix until blended. Pour over apricots.
3. Bake at 375°F about 35 minutes, or until a knife inserted near center comes out clean.
4. Set pie on wire rack to cool
