Chocolate Mint Ice Cream Pie
|Chocolate sandwich cookies||20 , crushed|
|Butter/Margarine||1⁄4 Cup (4 tbs), softened|
|Vanilla ice cream||1 Quart, softened|
|Green creme de menthe||6 Tablespoon (1/4 Cup Plus 2 Tablespoons)|
|Creme de cacao||2 Tablespoon|
|Whipping cream||1 Cup (16 tbs)|
|Powdered sugar||2 Tablespoon|
Combine chocolate cookie crumbs and butter, stirring well; press into a buttered 9-inch pieplate.
Combine ice cream, creme de menthe, and creme de cacao, stirring until smooth.
Spread ice cream mixture evenly over crust; cover and freeze.
Beat whipping cream at high speed of an electric mixer until foamy; gradually add sugar, beating until soft peaks form.
Spread whipped cream mixture over pie.
Garnish with chocolate shavings and curls, if desired; freeze until firm.
Let stand at room temperature 5 minutes before serving.
