Lite N Easy Crustless Pumpkin Pie

Ingredients
  Unflavored gelatin 2 Tablespoon (2 Envelopes)
  Cold water 2 Tablespoon
  Low fat evaporated milk 2 1⁄4 Cup (36 tbs), undiluted, divided (Carnation Brand)
  Solid pack pumpkin 16 Ounce (1 Libby's Can)
  Packed brown sugar/Low calorie equivalent 6 Tablespoon
  Pumpkin pie spice 1 Teaspoon
  Vanilla extract 1 Teaspoon
Directions

In large bowl, sprinkle gelatin over cold water to soften; set aside.
In small saucepan, heat 1 cup low fat: evaporated milk just to boiling.
Slowly stir hot milk into gelatin.
Mix in remaining evaporated milk, pumpkin, sugar, pumpkin pie spice and vanilla; set aside.
Spray 10-inch glass pie dish with nonstick cooking spray.
Pour pie mixture into dish; refrigerate.
