Lite N Easy Crustless Pumpkin Pie
|Unflavored gelatin||2 Tablespoon (2 Envelopes)|
|Cold water||2 Tablespoon|
|Low fat evaporated milk||2 1⁄4 Cup (36 tbs), undiluted, divided (Carnation Brand)|
|Solid pack pumpkin||16 Ounce (1 Libby's Can)|
|Packed brown sugar/Low calorie equivalent||6 Tablespoon|
|Pumpkin pie spice||1 Teaspoon|
|Vanilla extract||1 Teaspoon|
In large bowl, sprinkle gelatin over cold water to soften; set aside.
In small saucepan, heat 1 cup low fat: evaporated milk just to boiling.
Slowly stir hot milk into gelatin.
Mix in remaining evaporated milk, pumpkin, sugar, pumpkin pie spice and vanilla; set aside.
Spray 10-inch glass pie dish with nonstick cooking spray.
Pour pie mixture into dish; refrigerate.
