Miracle Peach Pie
|Sliced peaches||12 Ounce (Birds Eye, Thawed)|
|Water||1 1⁄4 Cup (20 tbs)|
|Vanilla pudding and pie filling||4 Ounce (One 4 Serving Size, Jell-O Package)|
|Lemon juice||2 Teaspoon|
|Almond extract||1⁄4 Teaspoon|
|Baked 8 inch pie shell||1|
Cut slightly thawed peaches into bite-size pieces.
Add to 1/2 cup of the water in a saucepan.
Bring to a boil.
Mean while, combine pudding mix, salt, lemon juice, and remaining 3/4 cup water.
Stir to form a smooth paste.
Add to boiling fruit, stirring to blend.
Then cook and stir until mixture comes to a full boil.
Remove from heat and add butter and almond extract.
Cool 5 minutes.
Pour into pie shell.
Let stand about 3 hours, or until firm.
Garnish with prepared Dream Whip or sweetened whipped cream, if desired.
