A top 10 comfort food recipe for me! Twice Baked Potatoes stuffed with Chicken Pot Pie. You almost can't ask for a finer morsel. Take moms classic Chicken Pot Pie Recipe or my Chicken Pot Pie with a South Western twist and stuff it into a huge Baked Potato for an amazingly delicious meal.

Ingredients

Butter 3 Tablespoon
Onion 1 , chopped
Salt & pepper To Taste
Cayenne pepper 1/4 Teaspoon
Flour 1/2 Cup (8 tbs)
Chicken broth 2 Cup (32 tbs)
Cooked chicken 1 Cup (16 tbs)
Cooked vegetables 1 Cup (16 tbs)
Baked potatoes 6
For mashed potatoes
Cheese 1 1/2 Tablespoon
Butter 1 Tablespoon
Salt & pepper To Taste

Directions

GETTING READY

1. Preheat the grill for cooking.

 

MAKING

2. Heat butter in a skillet. 

3. Saute onions in the skillet until its slightly brown. 

4. Drop in flour and mix it in. Cook for a couple of minutes.

5. Slowly add chicken broth to the skillet. Stir and continue to cook, removing all lumps from the broth. Stir constantly.

6. When the sauce reaches the desired consistency, add the chicken and vegetables. Mix well.

7. Adjust the consistency with milk, if required. Set this filling aside.

8. Remove the top of the potato. Sccop out the flesh to create a jacket. Set it aside.

9. Take the potato flesh and mix it with cheese, salt and pepper to make the mashed potatoes.

10. Fill the the potato jackets with chicken filling and cap the top with mashed potatoes. Use a fork to seal the top and create a pattern.

11. Place the potatoes on the cold side of the grill and bake for another 15 to 20 minutes.

 

SERVING

12. Serve it all by itself and enjoy.
