Watermelon pickle is a method of preserving watermelon rind. The red part of the water melon is not used in the watermelon pickle but the green outer crust is cut into pieces to make pickle. Other ingredients for the pickle are vinegar, sugar, salt, cloves, cinnamon and allspices. Watermelon rind is kept in bottles for preserving. Watermelon pickle is a good relish or condiment.
