Carrot Pickle

Carrot pickle is a delicious Indian recipe for making pickles that is an ideal accompaniment to any meal. To make carrot pickle at home, ingredients besides washed and dried carrots include mustard oil, turmeric powder, fennel seeds, mustard seeds, kalonji, fenugreek seeds, minced ginger, salt and limejuice. The pickle needs to be placed in a jar with a tight lid and kept in the sun for two weeks for the pickle flavors to develop.
