Delicious Red Pepper Pickles is a tempting and simple pickle that you can put together quiet easily. The flavor of this wonderful Delicious Red Pepper Pickles is addictive.
  Sweet red peppers 12 Large
  Cider vinegar 2 1⁄2 Cup (40 tbs)
  Sugar 1 1⁄4 Cup (20 tbs)
  Cinnamon stick 3 Inch (1 Piece)
  Whole cloves 12

Wash peppers, quarter lengthwise, remove seeds and white membrane, and cut quarters into 3/4 inch strips.
Pour boiling water over peppers in a bowl; cover and set aside about 3 minutes.
Drain off the water and immediately cover peppers with icy cold water.
Set aside about 10 minutes.
Meanwhile, combine vinegar with the remaining ingredients (cloves tied in cheesecloth) in a saucepan; bring to boiling, stirring until sugar is dissolved.
Boil 2 to 3 minutes.
Drain peppers in a colander.
Pack into hot sterilized jars.
Quickly cover with the hot pickling liquid, leaving headspace.
Remove air bubbles and adjust lids.
