Delicious Red Pepper Pickles
|Sweet red peppers||12 Large|
|Cider vinegar||2 1⁄2 Cup (40 tbs)|
|Sugar||1 1⁄4 Cup (20 tbs)|
|Cinnamon stick||3 Inch (1 Piece)|
Wash peppers, quarter lengthwise, remove seeds and white membrane, and cut quarters into 3/4 inch strips.
Pour boiling water over peppers in a bowl; cover and set aside about 3 minutes.
Drain off the water and immediately cover peppers with icy cold water.
Set aside about 10 minutes.
Meanwhile, combine vinegar with the remaining ingredients (cloves tied in cheesecloth) in a saucepan; bring to boiling, stirring until sugar is dissolved.
Boil 2 to 3 minutes.
Drain peppers in a colander.
Pack into hot sterilized jars.
Quickly cover with the hot pickling liquid, leaving headspace.
Remove air bubbles and adjust lids.
