Spiked Cranberry Orange Relish
|Fresh cranberries||1 Pound|
|Orange juice||1⁄4 Cup (4 tbs)|
|Sugar||3⁄4 Cup (12 tbs)|
|Grand marnier||6 Tablespoon|
|Water||1⁄2 Cup (8 tbs)|
|Coarsely chopped pecans||2⁄3 Cup (10.67 tbs)|
Wash and pick over cranberries for foreign pieces.
Combine in heavy saucepan with sugar, water and orange juice.
Bring to boil; reduce heat and cook at gentle boil until cranberries have popped.
If some remain un popped, that is all right.
If you wait until all of them pop, the cranberries will become too soft.
Remove from heat; stir in Grand Marnier.
A couple of hours before serving, stir in pecans.
NOTE TO COOK: Carry relish mixed with pecans to party either in serving bowl wrapped tightly in plastic or in storage container.
