Herring In Sherry Pickle

Ingredients
  Salted herring 2 , filleted and skinned
  Sherry 1⁄3 Cup (5.33 tbs)
  Water 1⁄4 Cup (4 tbs)
  Wine vinegar 3 Tablespoon
  Allspice 1⁄4 Teaspoon
  Onions 2 , thinly sliced into rings
  Chopped fresh dill 1 Tablespoon
Directions

1.Cover the herring with cold water and leave to soak for 24 hours. Drain, rinse and dry. Place in a non-metallic bowl.
2 Combine the sherry, water, vinegar and allspice. Pour over the herring. Cover with plastic wrap and refrigerate for 24 hours.
3 Serve garnished with the onion rings and dill.
