Uncooked Tomato Relish
|Cooked corn kernels||2 Cup (32 tbs) (Fresh, Frozen Or Canned)|
|Chopped tomatoes/Low sodium canned tomatoes, drained||5 1⁄2 Cup (88 tbs)|
|Chopped onion||1⁄2 Cup (8 tbs)|
|Chopped green bell pepper||1⁄2 Cup (8 tbs)|
|Jalapeno pepper||1 , seeded and finely chopped|
|Lemon juice||1⁄4 Cup (4 tbs)|
|Chopped parsley||2 Tablespoon|
|Ground cumin||1⁄2 Teaspoon|
1. Combine the corn, tomatoes, onion, green pepper, jalapeno pepper, lemon juice, sugar, parsley, and cumin in a large glass bowl.
2. Chill for 4 hours before serving.
