Artichoke Relish

Ingredients
  Artichokes 5 Quart
  Coarse salt 1 Cup (16 tbs)
  Turmeric 3⁄4 Tablespoon
  Pepper 1 Tablespoon
  Dry mustard 1 Tablespoon
  Flour 1⁄2 Cup (8 tbs)
  Brown sugar 1 Cup (16 tbs)
  White sugar 4 Cup (64 tbs)
  Water 1 Cup (16 tbs)
  Peppers 8 Large (Red And Green)
  Onions 7
  Vinegar 3 Quart
Directions

Wash artichokes carefully; cut into small bits.
Sprinkle with salt; let stand overnight.
Rinse and squeeze out water.
Make a paste of turmeric, pepper, dry mustard, flour, brown sugar, 1 cup white sugar and water.
Boil until thick.
Grind peppers and onions; mix with artichokes, paste, vinegar and re maining sugar.
Simmer for 20 minutes; seal in hot jars.
