Peach Pickles

  Peaches 8 Pound (Small Or Medium)
  Cloves 2 Tablespoon
  Cinnamon stick 8
  Sugar 4 Cup (64 tbs)
  Vinegar 1 Cup (16 tbs)
  Water 1⁄2 Cup (8 tbs)

Wash and pare peaches.
Tie cloves in thin white cloth; cook spices, sugar, vinegar and water for 5 minutes.
Add layer of peaches; cook slowly for 5 to 10 minutes or until peaches change color.
Remove peaches from syrup.
Repeat until all peaches have been heated; return peaches to syrup and cook again for 5 to 10 minutes after syrup begins to boil.
Do not overcook.
Pack peaches into clean, sterilized jars; add a stick of cinna mon to each jar.
Pour syrup over peaches, leaving 1/2 inch headspace.
Seal jars and store in cool place.
