Slice cucumbers into finger-sized strips; remove seeds.
Mix lime with 1 gallon water in crock.
Add cucumbers; stir well.
Let stand for 24 hours; drain.
Wash until water is clear; drain thoroughly.
Combine vinegar, sugar and pickling spice in large kettle; add cucumbers.
Let stand for 7 hours.
Bring to a boil; simmer, stirring occasionally, for 1 hour.
