Green Tomato Relish
|Ground onions||4 Cup (64 tbs)|
|Ground cabbage||4 Cup (64 tbs)|
|Green peppers||12 , ground|
|Red peppers||6 , ground|
|Salt||1⁄2 Cup (8 tbs)|
|Sugar||6 Cup (96 tbs)|
|Ground green tomatoes||4 Cup (64 tbs)|
|Celery seed||1 Tablespoon|
|Mustard seed||2 Tablespoon|
|Turmeric||1 1⁄2 Teaspoon|
|Vinegar||4 Cup (64 tbs)|
|Pickling salt||1 Cup (16 tbs)|
Sprinkle vegetables with salt; let stand overnight.
Drain; rinse with cold water.
Combine remaining ingredients and 2 cups water; bring to a boil.
Add vegetables; bring to a boil.
Stir well; do not simmer longer than 2 minutes.
Seal in sterilized jars.
Yield: 8 pints.
