Dried Fruit Pickle
|Dried apricots||150 Gram|
|Dried dates||150 Gram|
|Dried figs||150 Gram|
|Black raisins||150 Gram|
|Vinegar||4 Cup (64 tbs)|
|Chili powder||1 Tablespoon|
Soak apricots and dates overnight in a little vinegar.
Drain off vinegar.
Remove seeds and quarter apricots and dates.
Wash figs and black raisins in a little vinegar and remove seeds from raisins.
Place vinegar, jaggery, chilli powder and salt in a pan and bring to a boil.
Cook briskly for 5 mins.
Add all the dried fruits and boil briskly for another 5 mins.
Stir frequently to prevent sticking, and simmer till syrup thickens.
Place a few drops of syrup in a saucer and tilt.
If it spreads slowly, the pickle is ready.
Cool completely and store in glass jar.
Will keep a few months.
