Watermelon Pickles

Ingredients
  Sugar 4 Cup (64 tbs)
  Vinegar 2 Cup (32 tbs)
  Whole cloves 4 Teaspoon
  Cinnamon sticks 8
  Mustard seed 1⁄2 Teaspoon
  Watermelon 1 Large
Directions

MAKING
1. From one large watermelon rind, peel and remove the green and pink portions
2. Cut the white portion into cubes of 1" dimensions and soak in a solution of four tablespoons of water into one quart of water overnight
3. Drain it in the morning, add in a saucepan with fresh water and cook gently until tender; drain again
4. In a cheesecloth bag, combine the sugar, cloves, vinegar, mustard and cinnamon
5. Add the spices to the syrup and allow to boil; let it set for fifteen minutes
6. Add drained watermelon rind, cook until clear and transpareny and pack immediately into jars and seal

SERVING
7. Serve as per your tastes
