Tomato Apple Relish

Ingredients
  Green peppers 3 Medium, cut into 1-inch pieces to make 2 cups
  Sweet red peppers 3 Medium, cut into 1-inch pieces to make 2 cups
  Onions 4 Large, quartered to make 4 cups
  Tart cooking apples 12 Medium, cored and quartered to make 10 cups
  Tomatoes 10 Medium, cored and quartered to make 8 cups
  Sugar 2 1⁄2 Cup (40 tbs)
  Vinegar 2 1⁄2 Cup (40 tbs)
  Salt 2 Tablespoon
  Ground allspice 1 Teaspoon
Directions

Place steel blade in work bowl; add 2 cups of the peppers.
Process till chopped; transfer to 10-quart kettle or Dutch oven.
Repeat with remaining peppers, onions, apples, and then tomatoes, processing 2 cups at a time.
Stir in the sugar, vinegar, salt, and allspice.
Bring to boiling, stirring occasionally.
Reduce heat and boil gently, uncovered, about 1 1/4 hours or till desired consistency, stirring occasionally.
Fill jars and process.
