Tomato Apple Relish
|Green peppers||3 Medium, cut into 1-inch pieces to make 2 cups|
|Sweet red peppers||3 Medium, cut into 1-inch pieces to make 2 cups|
|Onions||4 Large, quartered to make 4 cups|
|Tart cooking apples||12 Medium, cored and quartered to make 10 cups|
|Tomatoes||10 Medium, cored and quartered to make 8 cups|
|Sugar||2 1⁄2 Cup (40 tbs)|
|Vinegar||2 1⁄2 Cup (40 tbs)|
|Ground allspice||1 Teaspoon|
Place steel blade in work bowl; add 2 cups of the peppers.
Process till chopped; transfer to 10-quart kettle or Dutch oven.
Repeat with remaining peppers, onions, apples, and then tomatoes, processing 2 cups at a time.
Stir in the sugar, vinegar, salt, and allspice.
Bring to boiling, stirring occasionally.
Reduce heat and boil gently, uncovered, about 1 1/4 hours or till desired consistency, stirring occasionally.
Fill jars and process.
