Watermelon Pickles

Ingredients
  Watermelon rind 1 Large
  Salt 4 Tablespoon
  Water 1 Quart
  Sugar 8 Cup (128 tbs)
  Cider vinegar 4 Cup (64 tbs)
  Whole cloves 4 Teaspoon
  Cinnamon stick 8
Directions

Peel and remove all green and pink portions from rind.
Cut into 1-inch cubes and soak overnight in salt and water.
Drain and cover with fresh water.
Cook until almost tender and drain.
Make syrup of sugar, vinegar and spices.
Tie spices in cheesecloth bag.
Heat syrup and spices and boil for 15 minutes.
Let mixture set for 15 minutes.
Remove spice bag.
Add drained watermelon rind.
Cook until clear and transparent.
Pack at once into pint jars and seal.
Makes 6 pints.
