Ripe Watermelon Pickle
|Diced watermelon||4 Quart, seeded (Use Red Variety)|
|Sugar||5 Cup (80 tbs)|
|Cider vinegar||1⁄2 Cup (8 tbs)|
|Whole cinnamon||1 Tablespoon, cracked|
|Whole cloves||1 Teaspoon|
Put diced melon in colander and with the hands squeeze out as much juice as possible.
Let drain for 1 hour.
Put melon, sugar, salt, vinegar, and lemon in large heavy kettle.
Add spices tied in cheesecloth bag.
Cook slowly for 50 to 60 minutes.
Stir occasionally to prevent sticking.
Pack at once into hot sterilized jars and seal.
Makes about 2 pints.
