Tomato Pepper Piccalilli
|Chopped green tomatoes||1 Quart|
|Sweet green pepper||2 , chopped|
|Sweet red peppers||2 , chopped|
|Mild onions||2 Large, chopped|
|Cabbage||1 Small, chopped|
|Salt||1⁄2 Cup (8 tbs)|
|Vinegar||2 Cup (32 tbs)|
|Firmly packed dark brown sugar||2 1⁄4 Cup (36 tbs)|
|Mixed pickling spice/Prepared mustard||2 Tablespoon|
Mix vegetables and salt, and let stand overnight.
Drain and press out liquid.
Add vinegar and sugar.
Tie spice in a cheesecloth bag and add to mixture.
Bring to boil and simmer until mixture is clear and slightly thickened.
Pour to overflowing into hot sterilized jars and seal.
