Tomato Pepper Piccalilli

Ingredients
  Chopped green tomatoes 1 Quart
  Sweet green pepper 2 , chopped
  Sweet red peppers 2 , chopped
  Mild onions 2 Large, chopped
  Cabbage 1 Small, chopped
  Salt 1⁄2 Cup (8 tbs)
  Vinegar 2 Cup (32 tbs)
  Firmly packed dark brown sugar 2 1⁄4 Cup (36 tbs)
  Mixed pickling spice/Prepared mustard 2 Tablespoon
Directions

Mix vegetables and salt, and let stand overnight.
Drain and press out liquid.
Add vinegar and sugar.
Tie spice in a cheesecloth bag and add to mixture.
Bring to boil and simmer until mixture is clear and slightly thickened.
Pour to overflowing into hot sterilized jars and seal.
