Beet And Horse Radish Relish

Ingredients
  Canned beets 29 Ounce (1 No 2 Can)
  Granulated sugar 1 Tablespoon
  Salt 2 Teaspoon
  Pepper 1⁄8 Teaspoon
  Bottled horseradish 1⁄2 Cup (8 tbs)
  Vinegar 1⁄2 Cup (8 tbs)
  Canned beet juice 1⁄2 Cup (8 tbs)
Directions

Drain beets, reserving about 1/2 c liquor.
Cut beets in small dice; add seasonings, horse-radish, and vinegar.
Add enough beet juice to cover beet mixture.
Chill overnight.
Serve as a meat or fish accompaniment.
