Refrigerator Corn Relish
|Distilled white vinegar||1 1⁄4 Cup (20 tbs)|
|Sugar||3⁄4 Cup (12 tbs)|
|Salt||2 1⁄2 Teaspoon|
|Celery seeds||1 1⁄4 Teaspoon|
|Mustard seeds||3⁄4 Teaspoon|
|Liquid hot pepper seasoning||1⁄2 Teaspoon|
|Cooked corn kernels||8 Cup (128 tbs)|
|Green bell pepper||1 Small, seeded and chopped|
|Diced pimentos||4 Ounce, drained (1 jar)|
|Green onions||3 , chopped (including tops)|
In a 3-quart pan, combine vinegar, sugar, salt, celery seeds, mustard seeds, and hot pepper seasoning.
Bring to a simmer over medium heat.
Simmer, uncovered, for 5 minutes; then remove from heat and let cool.
Stir in corn, bell pepper, pimentos, and green onions.
Ladle into 1-pint jars and screw on lids.
Refrigerate for up to 1 month.
