Refrigerator Corn Relish

Ingredients
  Distilled white vinegar 1 1⁄4 Cup (20 tbs)
  Sugar 3⁄4 Cup (12 tbs)
  Salt 2 1⁄2 Teaspoon
  Celery seeds 1 1⁄4 Teaspoon
  Mustard seeds 3⁄4 Teaspoon
  Liquid hot pepper seasoning 1⁄2 Teaspoon
  Cooked corn kernels 8 Cup (128 tbs)
  Green bell pepper 1 Small, seeded and chopped
  Diced pimentos 4 Ounce, drained (1 jar)
  Green onions 3 , chopped (including tops)
Directions

In a 3-quart pan, combine vinegar, sugar, salt, celery seeds, mustard seeds, and hot pepper seasoning.
Bring to a simmer over medium heat.
Simmer, uncovered, for 5 minutes; then remove from heat and let cool.
Stir in corn, bell pepper, pimentos, and green onions.
Ladle into 1-pint jars and screw on lids.
Refrigerate for up to 1 month.
