Ingredients
  Cucumber 1 Large, pared and seeded (8 inches long)
  Diced canned pimiento 1 Tablespoon, drained
  Coarsely grated carrot 1 Tablespoon
  Finely chopped scallion 2 Teaspoon (green onion)
  White wine vinegar 4 Teaspoon (1 tablespoon plus 1 teaspoon)
  Olive oil 1 Teaspoon
  Salt 1⁄4 Teaspoon
  Powdered mustard 1⁄8 Teaspoon
  Pepper 1⁄8 Teaspoon
  Granulated sugar substitute 1 Dash
Directions

Coarsely grate cucumber into a small bowl and pour off any liquid; add pimiento, carrot, and scallion.
In another small bowl combine remaining ingredients except pepper; pour over cucumber mixture and toss well.
