One Day At A Time Pickles
|Pickling cucumbers||1 Quart (Small Fresh Variety)|
|Iced water||2 Quart|
|Cider vinegar||1 Cup (16 tbs)|
|Kosher salt||1 1⁄2 Tablespoon|
|Water||1 Cup (16 tbs)|
|Garlic||4 Clove (20 gm), peeled and sliced|
|Pickling spices||1 Teaspoon (Without Red Pepper)|
|Dill head/3 teaspoons dill seed||3 Large (Fresh Ones)|
Place unscrubbed, firm cucumbers in iced water for 30 minutes.
Scrub off dirt and remove any particles of blossoms.
Meanwhile, sterilize one quart jar and lid.
In a small, stainless steel pan, bring vinegar, salt, water, garlic, and pickling spices, to a boil.
When mixture boils, remove garlic and place cucumbers in sterile jar with dill, packing carefully, so no cucumbers will touch the lid.
Pour vinegar solution over cucumbers to within 1/2 inch of the top of the jar, wipe rim of jar, seal, and process in a boiling water bath for 10 minutes.
Store jar in a dark place for at least 2 weeks before serving.
