Unusual Pickle Or Olive Juice Bread
|Stock||1 Quart (Warm, Including 2 Cups Juice From Pickles / Olives)|
|Baking yeast||2 Tablespoon|
|Oil||1⁄2 Cup (8 tbs)|
|Honey||1⁄2 Cup (8 tbs)|
|Rye flour||3 Cup (48 tbs)|
|Soy flour||2 1⁄2 Cup (40 tbs)|
|Whole wheat flour||7 Cup (112 tbs)|
Dissolve the yeast in the warm stock; add the honey, salt and flours in the order given. Use as much whole wheat flour as you need to make a kneadable dough.
Knead until smooth and elastic, let rise until double, punch down, knead again, and shape into 3 loaves.
Place the loaves in oiled pans and bake at 350°F for 40 to 50 minutes.
