Slaked Lime Cucumber Pickle
|Cucumbers||7 Pound, sliced|
|Slaked lime powder|
|Apple vinegar||2 Quart|
|Pickling spice||2 Ounce (1 Package)|
Cover the cucumbers with the lime and 2 gallons water.
Let soak for 24 hours, then drain.
Cover with fresh water and soak for 4 hours and drain.
Repeat freshwater soaking 4 times.
Combine all the remaining ingredients and bring to a boil.
Pour the hot vinegar mixture over well-drained cucumbers and let stand overnight.
Remove the cucumbers from liquid, reserving liquid.
Bring the reserved liquid to boil, then add cucumbers and boil for 2 or 3 minutes.
Pack the cucumbers in jars, then cover with hot liquid and seal.
