Carrot Pepper Relish
|Green pepper||4 Large|
|Sugar||2 Cup (32 tbs)|
|Cider vinegar||2 Cup (32 tbs)|
|Hot sauce||1⁄2 Teaspoon|
Scrape the carrots, peel the onions and seed the peppers.
Slice the vegetables and grind in food chopper, using medium blade.
Combine the salt, sugar and vinegar in a kettle; bring to a boil.
Add the vegetables and boil for 5 minutes.
Add the hot sauce and pack at once into hot sterilized pint or half pint jars.
The liquid should cover the vegetables completely.
