Spicy Relish Stuffed Eggs
|Hard-cooked eggs||6 (Shelled)|
|Mayonnaise/Salad dressing||1⁄4 Cup (4 tbs)|
|Pickle relish||1 Tablespoon|
|Prepared mustard||1⁄2 Teaspoon|
1. Cut the eggs in half lengthwise; carefully remove yolks to a small bowl. Mash thoroughly with a fork.
2. Add mayonnaise or salad dressing, relish, mustard, salt and pepper. Mix well.
3. Spoon yolk mixture into whites. Cover; refrigerate. Just before serving, garnish with chopped parsley, if you wish.
