Zucchini Pickles In Jars

Ingredients
  Water 2 Cup (32 tbs)
  Sugar 1 1⁄4 Cup (20 tbs)
  Vinegar 1 Cup (16 tbs)
  Turmeric 1 Teaspoon
  Salt 1 Teaspoon
  Dry mustard 1 Teaspoon
  Unpeeled zucchini 4 Large, thinly sliced
  Onion 1 Small, sliced
  Whole pimiento 1 , sliced
Directions

Prepare jars.
Combine first 6 ingredients in large saucepan and bring to boil.
Add remaining ingredients and let boil 10 minutes.
Pack into hot sterilized jars and process 10 minutes in boiling water bath.
Remove from water and let cool.
Test for seal.
Store in cool dark place.
Refrigerate after opening.
Four cucumbers, peeled and thinly sliced, can be substituted for zucchini.
