Fresh Cranberry Orange Relish
|Fresh cranberries||12 Ounce, rinsed and picked over to remove stems|
|Seedless orange||1 Medium, cut into eighths (Do Not Peel)|
|Sugar||3⁄4 Cup (12 tbs)|
|Chopped fresh ginger||1⁄2 Teaspoon|
Put half the cranberries and half of the orange sections into the container of a food processor; process until mixture is coarsely chopped with no whole berries remaining.
Transfer to a storage container and process the remaining cranberries and orange sections.
Combine the two mixtures and stir in sugar to taste.
Refrigerate, ideally for several days before serving, to allow flavors to blend.
