Green Cucumber Relish
|English cucumbers/7 large regular cucumbers, peeled||2 , unpeeled|
|Green peppers||4 , seeded|
|Sweet red peppers||2 , seeded|
|White onions||3 , peeled|
|Pickling salt||1⁄2 Cup (8 tbs)|
|White vinegar||2 Cup (32 tbs)|
|Sugar||2 1⁄2 Cup (40 tbs)|
|Celery seed||2 Teaspoon|
|Mustard seed||1 Tablespoon|
Grind vegetables with the coarse blade of a meat grinder.
Mix in the salt and cover with cold water.
Let stand 1 or 2 hours.
Drain well, pressing out as much moisture as possible.
Boil remaining ingredients together for 5 minutes.
Simmer and stir 5 to 6 minutes, then ladle into sterilized jars and seal.
