Pour the apricots and their soaking liquid into a saucepan and simmer for 10 to 15 minutes, or until soft.
Drain and chop the apricots.
Put the chillis, garlic, shallots, ginger, vinegar, salt, sugar and orange rind and juice into a saucepan and bring to the boil.
Stir in the apricots and simmer for 20 to 30 minutes or until the mixture has thickened.
Stir in the almonds and simmer for a further 5 minutes.
Pour into hot sterilized jars and seal.
