|Raw papaya||500 Gram, skinned, deseeded and cut into 1/2 inch cubes|
|Green chillies||8 , cut into 1 inch pieces|
|Amba haladi||4 Inch, cut into fine strips|
|Peeled garlic cloves||12 Tablespoon (small size)|
|Green peppercorns||3 Tablespoon|
|Fresh turmeric||3 Inch, skinned and cut into strips|
|Sour limes||20 , juiced|
|Water||1⁄2 Cup (8 tbs)|
|Rock salt||To Taste|
Place the Papaya, amba-halad, garlic, turmeric, ginger and 2 cups of water in a pan over very low heat. Sprinkle rock salt and allow to cook till all the water evaporates.
Mix in the green peppercorns.
Mix water and cornflour, stir into the pickle and replace the whole over low heat till you get a smooth thick texture to the pickle. Taste for salt. Add the lime juice, mix and remove from the fire. Cool. Bottle and refrigerate.
This pickle is very good for health.
