Golden Fruit Relish

Ingredients
  Apples 8
  Peaches 8
  Pears 8
  Sweet red peppers 2
  Hot red pepper 1 Small
  Celery stalks 6
  Onions 3
  Cider vinegar 2 Cup (32 tbs)
  Sugar 3 Cup (48 tbs)
  Mixed pickling spice 1⁄2 Cup (8 tbs)
  Bleached raisins 1 Cup (16 tbs)
  Chopped candied ginger 1⁄2 Cup (8 tbs)
  Salt To Taste
Directions

Peel and dice fruits.
Dice or mince peppers.
Dice celery and onions.
Combine in a deep saucepan or kettle and add vinegar, sugar and spice.
Stir and bring to a boil.
Simmer and stir uncovered until mixture thickens.
Time depends on juiciness of fruit.
Add raisins and ginger 10 minutes before bottling and season with salt to taste.
Ladle into hot sterilized jars and seal.
