Bread And Butter Pickles
|Pickling cucumbers||18 (4 Inch)|
|Onions||6 Small, thinly sliced|
|Salt||1 Cup (16 tbs)|
|Cider vinegar||2 1⁄2 Cup (40 tbs)|
|Celery seed||1 1⁄2 Teaspoon|
|Mustard seed||1 Tablespoon|
|Sugar||3 Cup (48 tbs)|
Scrub cucumbers and thinly slice without peeling.
Alternate cucumbers and onion slices in a bowl.
Sprinkle a little of the salt between each layer.
Leave 30 minutes.
Meanwhile, mix remaining ingredients and bring to a boil.
Simmer 5 minutes.
Rinse cucumber and onion slices under cold water to remove salt and drain.
Add to boiling syrup and boil 1 or 2 minutes.
Pack in hot sterilized sealers and seal.
