Piccalilli Or Green Tomato Relish

Ingredients
  Peeled cored chopped green tomatoes 4 Quart
  Chopped cabbage 2 Quart
  Chopped sweet green peppers 2 Cup (32 tbs)
  Chopped onion 1 Cup (16 tbs)
  Brown sugar 1 1⁄2 Cup (24 tbs)
  Salt 1⁄2 Cup (8 tbs)
  Mustard seed 2 Tablespoon
  Celery seed 1 Tablespoon
  Prepared horseradish 1 Tablespoon
  Vinegar 4 1⁄2 Cup (72 tbs)
Directions

Sprinkle salt over vegetables and mix thoroughly; let stand 3 to 4 hours.
Drain thoroughly.
Press to remove free liquid.
Add sugar, spices and horse radish to vinegar; simmer 15 minutes.
Add vegetables and bring to a boil.
Pack hot into hot jars, leaving 1/4-inch head space.
Adjust caps.
Process 10 minutes in boiling water bath.
