Clear Mixed Pickles

Ingredients
  Cauliflower 1
  Carrot 1 Large
  Cucumbers 2
  Cabbage 1⁄2
  Green peppers 4
  Sugar 12 Ounce
  White vinegar 2 1⁄2 Pint
  Salt 3⁄4 Tablespoon (1 Dessertspoon)
  Chilies 2
Directions

Wash all vegetables well.
Cut cauliflower into small flowrets, peel carrot, cut into thick strips.
Place cauliflower and carrot in saucepan, cover with water, boil until just tender; drain.
Cut cucumbers into quarters lengthwise, remove seeds, chop roughly.
Cut cabbage into coarse pieces; remove seeds from peppers, cut into 1 in. pieces.
Place prepared vegetables into a large bowl.
Combine sugar, vinegar and salt in a saucepan, bring to the boil, pour over vegetables, cover, stand overnight.
Pour into hot sterilised jars.
Remove seeds from chillies, add 1 or 2 chilli strips to each jar, seal.
