Sweet Pickle Spears
|Cucumbers||4 Pound (4 Inch Size)|
|Sugar||4 Cup (64 tbs)|
|Vinegar||3 3⁄4 Cup (60 tbs)|
|Canning salt||3 Tablespoon|
|Celery seed||4 Teaspoon|
|Mustard seed||1 1⁄2 Teaspoon|
Slice ends from cucumbers and cut into spears.
Cover cucumbers with boiling water; let stand 2 hours.
Drain and pack into hot jars, leaving 1/4-inch head space.
Bring remaining ingredients to a boil.
Pour hot liquid over cucumbers, leaving /4-inch head space.
Remove air bubbles.
Process 10 minutes in boiling water bath.
