Spicy Melon Pickles
|Cantaloupe||13 Cup (208 tbs), cut into 1 inch cubes or balls|
|Vinegar||3 Cup (48 tbs)|
|Water||2 Cup (32 tbs)|
|Whole cloves||2 Teaspoon|
|Sugar||4 1⁄2 Cup (72 tbs)|
Combine vinegar and water in a large sauce pot.
Tie spices in a cheesecloth bag and add to vinegar mixture.
Bring to a boil.
Reduce heat and simmer 5 minutes.
Remove from heat; add melon; and let stand 1 1/2 to 2 hours.
Add sugar to sauce pot.
Bring to a boil, stirring to dissolve sugar.
Reduce heat and simmer 45 minutes or until cantaloupe becomes slightly transparent.
Pack melon balls into hot jars, leaving 1/4-inch head space.
Pour hot syrup over melon balls, leaving 1/4 inch head space.
Remove air bubbles.
Process 10 minutes in boiling water bath.
