Sweet Cucumber Pickles
|Brined cucumber||3 Pound, desalted|
|Sugar||3 1⁄3 Cup (53.33 tbs)|
|Ginger root||1 Tablespoon|
|Whole cloves||1 Tablespoon|
Dissolve sugar in vinegar, add spices tied in a cheesecloth bag.
Bring to a boil, add drained cucumbers and boil 3 minutes.
Pour into a container and allow to stand for 3 days.
Each day drain off liquid, bring to a boil and pour over cucumbers.
Pack the cucumbers in hot jars, leaving 1/4-inch head space.
Remove spice bag.
Bring pickling liquid to a boil.
Cover cucumbers with hot liquid, leaving 1/4-inch head space.
Remove air bubbles.
Process 15 minutes in boiling water bath.
