Pear Relish

Ingredients
  Pears 10 1⁄2 Pound, peeled, cored and chopped
  Chopped onions 6 Cup (96 tbs)
  Chopped sweet red peppers 6 Cup (96 tbs)
  Chopped sweet green peppers 6 Cup (96 tbs)
  Celery 1 Bunch (100 gm), discard leaves and coarse stalk
  Sugar 3 Cup (48 tbs)
  Allspice 1 Tablespoon
  Salt 1 Tablespoon
  Vinegar 5 Cup (80 tbs)
Directions

Combine all ingredients and let stand overnight.
Bring mixture to a boil.
Pack into hot jars, leaving 1/4-inch head space.
Adjust caps.
Process 20 minutes in boiling water bath
