|Pears||10 1⁄2 Pound, peeled, cored and chopped|
|Chopped onions||6 Cup (96 tbs)|
|Chopped sweet red peppers||6 Cup (96 tbs)|
|Chopped sweet green peppers||6 Cup (96 tbs)|
|Celery||1 Bunch (100 gm), discard leaves and coarse stalk|
|Sugar||3 Cup (48 tbs)|
|Vinegar||5 Cup (80 tbs)|
Combine all ingredients and let stand overnight.
Bring mixture to a boil.
Pack into hot jars, leaving 1/4-inch head space.
Process 20 minutes in boiling water bath
