Ingredients
  Zucchini 1 Pound, cut into 1/4-inch slices
  Tender green beans 1 Pound, ends removed
  Carrots 1⁄2 Pound, cut into slices
  Small pickling onions 1⁄2 Pound, peeled and cut into 1/4-inch slices
  Sweet green peppers 2 Large, cut into 1/2 inch strips
  Sweet red pepper 1 Large, cut into 1/2 inch strips
  Cider vinegar 3 Cup (48 tbs)
  Brown sugar 1 Cup (16 tbs)
  Sugar 1 Cup (16 tbs)
  Dry mustard 2 Tablespoon
  Mustard seed 2 Tablespoon
  Salt 1 1⁄2 Tablespoon
  Cinnamon 1 Teaspoon
  Ginger 1 Teaspoon
Directions

Combine vinegar, sugars, spices and salt in a large sauce pot.
Bring to a boil then add prepared vegetables.
Return to a boil.
Reduce heat and simmer 15 minutes.
Pack hot into hot jars, leaving 1/4-inch head space.
Remove air bubbles.
Adjust caps.
Process 15 minutes in boiling water bath.
