Fruity Tomato Relish

Ingredients
  Ripe tomatoes 3 Pound, cored, peeled, and cut into wedges
  Ripe pears 3 Pound, pared, cored, and cubed
  Onions 2 Large, coarsely chopped
  Green peppers 2 Large, seeded and coarsely chopped
  Sweet red peppers 2 Large, seeded and coarsely chopped
  Raisins 1 Cup (16 tbs)
  Brown sugar 1 Cup (16 tbs)
  Light corn syrup 1 1⁄2 Cup (24 tbs)
  Cider vinegar 1 1⁄2 Cup (24 tbs)
  Salt 1 1⁄2 Teaspoon
  Dry mustard 1 Teaspoon
  Ground ginger 1 Teaspoon
  Diced crystallized ginger 1⁄4 Cup (4 tbs)
  Ground cloves 1⁄4 Teaspoon
  Crushed red pepper flakes 1⁄4 Teaspoon
Directions

1. Put tomatoes, pears, onions, peppers, and raisins in a large stainless steel or enamel pan. Stir in the sugar, corn syrup, vinegar, salt, mustard, ginger, cloves, and red pepper flakes. Bring to a boil and boil, uncovered, for about 1 hour, or until thick, stirring occasionally.
2. Ladle the relish into hot clean canning jars. Seal and process in a boiling water bath for 10 minutes. Cool. Check the seals and store in a cool dry place.
