Spicy Mango Pickle

An easy process to prepare savory and tasty mango pickle. Make sure to use fresh mango for best result.Eat this pickle with any of your favorite dishes.
  Diced mangoes 3 Cup (48 tbs) (With Skin)
  Mustard seeds 3⁄4 Teaspoon
  Fenugreek seeds 3⁄4 Teaspoon
  Crushed ginger 3 Tablespoon
  Crushed garlic 3 Tablespoon
  Vinegar 1⁄2 Cup (8 tbs)
  Sesame oil 1⁄2 Cup (8 tbs)
  Asafoetida powder 3⁄4 Teaspoon
  Turmeric powder 1⁄2 Teaspoon
  Curry leaves 2 Medium
  Sugar 3⁄4 Teaspoon

Roast mustard seeds and fenugreek on a heated pan and roast it until it turns brown. Keep it on a low flame. Note - do not add oil.

Grind these seeds into a coarse form and keep it aside.

Pour sesame oil on a heated pan. Splutter few fenugreek and mustard seeds.Add the curry leaves. Add the ginger and garlic and stir occasionally. Note - Please keep it on a low flame.

Add the red chili powder, turmeric powder, Asafoetida powder, mustard and fenugree powder. Stir for sometime and add the vinegar.Add the salt and sugar. Finally add the mangoes.Coat all the pieces evenly with the spices. Cover with a lid for 5 mins. After this turn off the heat and store it in a glass container for future use.
