Mustard Cucumber Relish

Ingredients
  Peeled cucumbers 6 Large
  Onions 6 Large
  Green pepper 1
  Sweet red pepper 1
  Coarse pickling salt 1⁄4 Cup (4 tbs)
  Sugar 3 Cup (48 tbs)
  Flour 1⁄2 Cup (8 tbs)
  Dry mustard 3 Tablespoon
  Turmeric 1 1⁄2 Teaspoon
  Celery seed 1 1⁄2 Teaspoon
  White vinegar 3 Cup (48 tbs)
  Water 1 Cup (16 tbs)
Directions

1. Put the vegetables through the coarse blade of the food chopper.
2. Sprinkle with salt and add 2 1/2 c. cold water.
3. Let stand 1 hr. then drain well in a collander.
4. In a large saucepan combine:
3 c. sugar, 1/2 c. flour, 3 tbsp. dry mustard, 1/2 tsp. turmeric, 1 1/2 tsp. celery seed, 3 c. white vinegar, 1 c. water
5. Add well drained vegetables.
6. Bring to a boil, and let simmer 1/2 hr., stirring frequently.
7. Pack in hot, sterile jars, and seal.
